Vinification and Barrel-ageing: soft, whole-bunch pressing. Cold, static must decanting. This wine is totally aged on fine lees (sur lies) in new French oak barrels for 12 to 18 months, with continuous resuspension of noble lees (batonnage). This technique is used to give the wine a richer bouquet and a more intense taste.
Bottle-ageing: at least 12-month bottle-aging
Alcoholic strength: 13% – 14%
Serving temperature: 14°C0

The Bruni 54 hybrid vine variety was created in 1936 by Prof. Bruno Bruni, who served in the Italian Ministry of Agriculture in the period 1930 to 1950. It was obtained by crossing by pollination the Sauvignon Blanc and Verdicchio cultivars. It is quite uncommon and exclusively grown in the Marches region. This vine variety had almost totally disappeared when the winery decided to replant a few vines in the context of a project for the reviving of old precious cultivars.

A deep, crystal-clear gold colour to the sight. To the nose, hints of ripe, cooked fruits in alcohol, dried spicy flowers with a hue of hay. Big body in the mouth balanced between softness and hardness, a mouth finish of candied fruits.

First course: Pappardelle (fresh egg pasta similar to noodles or tagliatelle but broader in width) with Carpegna DOP ham, a typical charcuterie product of Marches (“DOP” stands for “protected designation of origin”, PDO)

– John Dory fish “acqua pazza” style: a fish-and-vegetable plate
– Chicken “fricò” style: stewed chicken chops
