Harvesting method: Selection of the best healthy batches with a good leave-fruit ratio; harvesting is exclusively made by handpicking with onsite selection.
Type of terrain: sandy/clayey
Yield per hectare: 9 tonnes.
Vinification: Whole bunches are sorted by a vibrating table. After de-stemming, grapes are fed by a pump to a fermentation vat. The must produced is protected by adding tannin to avoid oxidation and initiate colour stabilisation. Alcoholic fermentation starts very rapidly through the ‘pied de cuve’ technique. The added ferments are expressly selected as low sulphur-dioxide producers. Malolactic bacteria are used in post-fermentation. Ageing is then made in steel vats for 6 months.

Alcoholic strength: 13% – 14%
Serving temperature: 16°C – 18°C

ORGANOLEPTIC PROPERTIES
Ruby red to the sight. More intense to the nose with red flowers and fleshy red fruits, cherry, marasca red currant, violet and iris. Not so much long- lingering but intense in the mouth, with a taste of red fruits making a surprising comeback, impressive for its softness and a great balance between soft and hard parts.
